If this is vegetarian, sign me up! (Seriously.) Even my carnivore husband was happy! You’ll need . . .
1 medium onion, chopped
2 Tbls olive oil
1 package (12 oz) Morning Star crumbles (or other soy crumbles)
1 can (28 oz) Dei Fratelli Seasoned Diced Tomatoes (has celery, onions, garlic, etc.)
1 can (16 oz) Bush’s Chili Beans
1 can (16 oz) red kidney beans, drained and rinsed
1 tsp each cumin, garlic powder, and chili powder
1 C sharp cheddar cheese, grated
corn chips.
Heat oil in large skillet, add onion and saute 2 minutes or until brown. Add diced tomatoes, beans, spices and crumbles, cook 8 minutes or so until heated through. Top with cheddar cheese, and scoop up with corn chips.

This recipe sounds great, Heidi! I use these crumbles often. I’ll have to try this soon. 🙂
