Wee Cook Wednesday: Fresh Blueberry Pie

Blueberry_BushThis week my dear husband and children hit the local blueberry bushes … and came back with enough for two pies and a fruit salad. Yum!

For those of you fortunate enough to have an abundance of fruit nearby, I thought I’d share my favorite blueberry pie recipe. Very easy, and absolute decadence with either a sploosh of whipped cream (the real stuff, which goes “sploosh,” or a scoop (which goes “plop”) of vanilla ice cream.

Fresh Blueberry Pie  (makes 1 9-inch pie)

1 piecrust (unbaked)

4 C fresh, washed blueberries
1 C sugar
3/4 C flour
1 tsp cinnamon
1 Tbls lemon juice
dash allspice

4 Tbls butter
2/3 C brown sugar
1/3 C flour
1 tsp cinnamon

Preheat oven to 425. Combine berries, flour, sugar, cinnamon (listed under “pie”) and pour into pie shell. Splash with lemon juice. With hands, mix together topping, squishing until combined. Scatter over pietop, and bake 50 minutes, until nicely browned. (Check halfway through and cover rim with foil if too brown.

  1. Hi,

I am from India. We do not have much of this crop. But after reading Ms. Sarah Powley’s (Head of the Department of English, McCutcheon High School, Indiana, USA) essay on Blueberries I am tempted to taste a fresh Blueberry Pie.
This Recipe is really interesting. If ever I make to US again, I will try my hand on this recipe.
The most interesting thing about the recipe is there is no use of any animal protein. Not even use of eggs. It is a perfect recipe to try for pure vegetarians like me.

I would like permission to use one blueberry bush photo that was in your article above on the website above in a Blueberry pruning CD that I am developing for Whitesbog Preservation Trust, Browns Mills, NJ, USA which is the site of the first development of the commercial highbush blueberry in the USA.
The CD is part of a fundraiser for the Whitesbog historical state park, a nonprofit organization. The CD is a public service and will be made available to the public for a nominal fee. It will be referenced in the CD with the website title above and be good advertising for the website above.
