Here’s a tasty little something to have ready for New Year’s Day, when the family comes down from a night of reveling. Serve with Canadian bacon, hash browns, English muffins, and fruit salad.
1/4 C butter or margarine
18 eggs
1 C sour cream
1 C milk
1/2 C chopped fresh parsley
2 tsp salt
1 med. onion, chopped fine
1 C shredded sharp cheddar cheese
Heat oven to 325 degrees. Melt butter in 13×9 baking dish. In large bowl, beat eggs, sour cream, milk, and salt. Stir in onion. Pour into pan. Sprinkle with cheese and bake until eggs are set but moist, about 35 minutes. Bake Canadian bacon while eggs bake. Cut omelet into 12 3-inch squares. Arrange on large platter with bacon slices.
